One-Pot Lentil & Summer Vegetable Soup

Ingredients
  

  • 1 Tbsp vegetable oil or butter
  • 1 onion, chopped
  • 4-6 cloves garlic, minced or 2 tsp garlic powder
  • 1 cup dried lentils, rinsed no soaking needed
  • 2 carrots, diced
  • 1-2 potatoes or sweet potatoes, diced
  • 1 summer squash, diced
  • 1 tsp cumin
  • 1 tsp dried oregano
  • 4-5 cups broth or water
  • Salt & pepper to taste
  • 1 cup shredded cooked chicken optional
Optional toppings
  • Lime
  • Cilantro

Method
 

  1. Saute the Aromatics: Warm the oil or butter in a large pot over medium heat . Add the onion and cook 3-4 minutes until soft. Stir in the garlic and cook for 30 seconds.
  2. Add the Lentils & Spices: Pour in the rinsed lentils, cumin, and oregano. Stir to coat, about 1 minute.
  3. Add the Vegetables & Liquid: Add the carrots, potatoes, squash, and water or broth. Stir and bring to a boil.
  4. Simmer: Reduce heat to low, cover partially, and simmer 20-25 minutes, until the lentils and vegetables are tender, stirring occasionally.
  5. Add the Chicken (optional): Stir in the shredded chicken and warm through, 2-3 minutes.
  6. Finish and Serve: Taste and adjust salt and pepper. Top with fresh cilantro and a squeeze of lime
