Fresh Peach & Cucumber Salsa

Fresh Peach & Cucumber Salsa

Peaches and cucumbers are both mostly water, making this salsa a refreshing, hydrating choice on hot days, along with a good dose of vitamin C and fiber. It’s a bright way to use summer produce without turning on a stove – just pair it with a protein like beans, yogurt, or chicken to make it a meal.

Ingredients

  • 2 ripe peaches, diced
  • 1 cucumber, diced
  • ½ onion, finely diced
  • 1 jalapeno, finely diced
  • ¼ cup fresh cilantro, chopped
  • Juice of 1 lime 2 Tbsp vinegar also works
  • Salt & pepper to taste
  • 1 pinch chili powder or cumin optional

Method

  1. Prep the Produce: Dice the peaches, cucumber, jalapeno, and onion into small, even pieces.
  2. Combine: In a bowl, gently mix the peaches, cucumber, jalapeno, onion, and cilantro.
  3. Season: Squeeze in the lime juice and add a pinch of salt. Stir gently so you don’t mash the fruit.
  4. Rest and Serve: Let it sit for 5-10 minutes for the flavors to blend, if you have time. Serve right away or chill if you have access to a fridge.

Notes

Make it a meal: this salsa is a topping or side, not a full meal on its own. Spoon it over beans and rice, alongside yogurt and bread, or on top of chicken for a filling balanced plate.
Best eaten the same day since peaches soften quickly.
